Easy Cookie Recipe | Forty-Two³

Hello everybody, it is us, Ally, Beth and Sarah.
  
Doing a post together has been long overdue and we're finally doing it right now!!
 
So today, we'll be doing a.....BAKING POST!!! Because Christmas is right around the corner and why not. Who doesn't love cookies. (If you don't then...OKAY!). But can we take a moment and say how fast 2015 went by. It's like POOF now I'm here; now I'm not.
 
Anyways.....BOOM! Simple and Easy Cookies for all year round.

Ingredients:
- 200 g or 7 ounces of softened, unsalted butter
- 150 g or 5 ½ ounces of caster sugar
- 1 large egg
- 2 teaspoons of vanilla extract
- 400 g (yes, 400 g) or 14 ounces of plain flour

This is not a scam. Seriously. We are not joking.

Other things you might need:
- Electric Mixer
- A few bowls
- Spatula / Wooden spoon
- Rolling pin
- Tray
- Oven
- Cookie cutter(s)
- Cling wrap
- Baking paper
- Wax paper (Do NOT melt wax on top of paper and call that wax paper. Just a friendly tip)
- Weighing thing Measuring scale

Optional:
- Frosting/Icing
- Gift packing stuff (Cellophane, ribbons etc)
- Music
- Friends

All set? Let's begin!
 
Step 1 : Wash your hands.
 
Step 2: Place the egg and vanilla extract into a bowl and leave that aside for a moment.
 
Step 3: Take a large bowl and place the butter and sugar in it, creaming it with an electric mixer. When it's coming together, slowly add your egg and vanilla extract.

Step 4: When your batter is well mixed, take it off the electric mixer and place it on the kitchen counter/table/any flat surface you wish to continue the entire thing. Slowly add the flour and mix it well with a wooden spoon or a spatula; or in our case: BOTH.
Step 5: Wrap it in cling wrap and let it chill in the refrigerator for at least 10 minutes.
 
Step 6: After 10 minutes, bring the dough out and place it between two sheets of wax paper and roll it until it's about 0.6 centimetres (?). Exact measurements; we're not sure cause the thought of placing a ruler after rolling it out didn't occur to us.
Step 7: Using cookie cutters dipped in a little flour, CUT DEM DOUGH.....however you desire.
   
Step 8: Transfer the already-cut cookie dough onto a baking sheet that is on the baking tray and let it chill in the refrigerator (again) for 10 minutes. It's gonna be a cool cookie. (Get it? Get it? Never mind) Meanwhile... preheat your oven 180ºc or 350ºF

Sarah : After trying this recipe again I realised that chilling it again is unnecessary and we kinda chilled it again just cause it was breaking when we tried to move the cookies on to the baking tray and I find using a spatula to transfer the cookies 10 times easier.
Step 9: Bake the cookies in the preheated oven for 15-18 minutes, or until it's at a point where it's turning golden at the edges.
 
We did a total of three trays with varying sizes of cookie shapes; and through experience, the last batch of cookies took the least time; so you might wanna be on the watch after 10 minutes of baking. [Just Saying].
Step 10 (last one, we promise): EAAAAAT IT!!! (Or share it...O_O)
   
You can totally just frost these cookies or use icing to make it a whole lot cuter but we are...lazy, weirdly 'nobody got time for dat' kind of girls so we didn't do that. But feel free to do so. These make an awesome, yummy Christmas Gift add-on or just cookie jar fillers.

You can do this when you're bored, when you know you have a group of hungry children coming your way, when you are hungry, when you're in an 'OH MY GOSH I HAVE NOTHING TO GIVE MY FRIENDS/FAMILY FOR CHRISTMAS' kind of situation, when you wanna bake something to impress the bae, when you wanna impress yourself...basically this is handy for majority of  situations.

Oh and guys Sarah here!! I tried this recipe out for my church potluck and the whole box was empty by the end of the day!! Oh and just saying these cookies taste a little like shortbread or those butter cookies you get in a tin so it's really yummy!
